Carrot noodles with ginger lime peanut sauce

INGREDIENTS:

For the carrot pasta:

5 huge carrots, stripped and julienned or spiraled into slim strips

1/3 cup (50g) cooked cashews

2 tablespoons new cilantro, finely hacked

For the ginger-peanut sauce:

2 tablespoons rich nutty spread

4 tablespoons ordinary coconut milk

Squeeze cayenne pepper

2 huge cloves garlic, finely hacked

1 tablespoon new ginger, stripped and ground

1 tablespoon lime juice

Salt, to taste

INSTRUCTIONS:

Consolidate all sauce ingredients in a little bowl and combine until smooth and rich and put in a safe spot while you julienne/spiralize the carrots.

In a huge serving bowl, tenderly hurl the carrots and sauce together until equally covered. Top with broiled cashews (or peanuts) and newly hacked cilantro.
